Pappalam, also called Appalam or Papad, is a traditional South Indian crispy wafer made using urad dal flour, rice flour, salt, and mild spices. The dough is rolled into thin discs and sun-dried until completely dehydrated, which helps in long-term storage without preservatives.
When deep-fried in hot oil or roasted over a flame, Pappalam puffs up into a light, crunchy texture. It is commonly served as a side dish with South Indian meals such as rice, sambar, rasam, and curd rice, adding a crispy contrast to soft dishes.
